Ingredients
Instructions
- Cook and dice potatoes.
- Dice the beets.
- Put all ingredients into a large bowl.
- Make sure corn and beets are well drained.
- Mix dressing ingredients in a small bowl with a wire whisk.
- Consistency should be like commercial bottled salad dressing.
- Increase mayonnaise, if needed.
- Pour dressing over salad and mix well.
- Keep refrigerated until serving.
- Optional ingredients: asparagus, eggs, and/or tomatoes.
