Salmon Barbecue

Ingredients

  • 10 lb. salmon, filleted (skin left on)
  • 8 Tbsp. melted butter
  • 1/4 ??? fresh lemon juice
  • 1/4 tsp. dried oregano

Instructions

  1. Melt butter and mix with lemon juice and oregano.
  2. Brush mixture over salmon fillets.
  3. Lightly salt and pepper fillets. Let salmon stand at room temperature for 1 hour.
  4. Place fillets, skin side down, on a piece of aluminum foil.
  5. Fold up sides of foil to form a side about 1/2-inch high.
  6. Place foil on barbecue over wood or charcoal embers.
  7. Cover salmon with grill lid or piece of foil.
  8. Every 5 to 10 minutes, baste fish with sauce. Cooking time should be 25 to 30 minutes.
  9. Fish is done when it flakes with fork.
