Salmon Packets
Salmon packets combine tender fish, flavorful green onions, and seasoned potatoes, baked in foil for a wholesome, easy-to-make meal perfect for quick family dinners or entertaining.

Instructions
- Cut potatoes into 1/3-inch thick slices.
- Cut 4 pieces of foil, each about 8 inches square.
- Dip potato slices in melted butter, then place equal portions on each piece of foil.
- Top each with 2 tablespoons of chopped green onion.
- Cut salmon fillet into strips 3 to 4 inches long, 1 1/2 inches wide, and 1/2 inch thick.
- Place equal portions of salmon over the potatoes on each foil piece.
- Sprinkle each with salt, 1/4 teaspoon of dill weed, and drizzle with remaining melted butter.
- Pull up the corners of the foil and twist to seal each packet.
- Bake in a 325°F oven for 20 to 25 minutes until the fish turns pink.
- Serve with lemon wedges.
