Salmon packets combine tender fish, flavorful green onions, and seasoned potatoes, baked in foil for a wholesome, easy-to-make meal perfect for quick family dinners or entertaining.

Ingredients

  • 4 medium size new potatoes
  • 1/4 cup melted butter or margarine
  • 1/2 cup chopped green onion
  • 1 1/2 lb salmon fillet
  • salt
  • pepper
  • 1 teaspoon dill weed

Instructions

  1. Cut potatoes into 1/3-inch thick slices.
  2. Cut 4 pieces of foil, each about 8 inches square.
  3. Dip potato slices in melted butter, then place equal portions on each piece of foil.
  4. Top each with 2 tablespoons of chopped green onion.
  5. Cut salmon fillet into strips 3 to 4 inches long, 1 1/2 inches wide, and 1/2 inch thick.
  6. Place equal portions of salmon over the potatoes on each foil piece.
  7. Sprinkle each with salt, 1/4 teaspoon of dill weed, and drizzle with remaining melted butter.
  8. Pull up the corners of the foil and twist to seal each packet.
  9. Bake in a 325°F oven for 20 to 25 minutes until the fish turns pink.
  10. Serve with lemon wedges.
