Salsa-Marinated Chicken

Ingredients

  • 1 1/2 cups prepared salsa, good quality
  • 2 tablespoons tomato paste
  • 4 boneless skinless chicken breast halves
  • 1 green bell pepper, cut into thin strips
  • 2/3 cup frozen corn kernels, thawed
  • 3 tablespoons scallions, chopped finely
  • 2 tablespoons fresh lime juice
  • 2 tablespoons fresh cilantro or 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat broiler or prepare grill.
  2. In a shallow bowl,combine 1/2 cup salsa and the tomato paste and stir until blended.
  3. Add the chicken,turn to coat and let stand while you prepare the vegetable salsa.
  4. In a medium bowl,combine the remaining 1 cup salsa,the bell pepper,corn,scallion,lime juice and cilantro.
  5. Broil or grill chicken 4 inches from the heat for about 4 minutes per side or until the chicken is cooked through.
  6. Place the chicken on 4 plates,spoon the vegetable salsa on the side and serve.
