Ingredients

  • 2 medium potatoes
  • 1 Tbsp sugar
  • 1 tsp salt
  • 1 pt boiling water
  • 3 Tbsp cornmeal
  • 1/4 tsp baking soda

Instructions

  1. Peel and slice the potatoes. Add the remaining ingredients and let the mixture stand overnight in a warm place.
  2. In the morning, when the mixture has foam on top, remove and discard the potatoes. Add 1/4 teaspoon of soda and thicken with flour.
  3. Allow the mixture to rise. Then add 1/2 gallon (8 cups) of flour to make a sponge.
  4. Add the risen sponge mixture and let it rise again.
  5. Divide the dough into 4 loaves and place them in well-greased pans.
  6. Bake in a moderate 350°F (175°C) oven for 45 minutes or more until golden brown.
