Ingredients

  • 6 squares unsweetened chocolate
  • 6 cups sugar
  • 6 tablespoons light corn syrup
  • 2 cups evaporated milk
  • 3 ounces butter
  • 1 tablespoon vanilla
  • 1/8 teaspoon salt

Instructions

  1. Mix sugar and evaporated milk thoroughly with a spoon in a large saucepan (3-quart or larger).
  2. Add salt, light corn syrup, and unsweetened chocolate to the mixture.
  3. Stir carefully until combined.
  4. Butter inside rim of the pot to prevent overflow during cooking.
  5. Cook slowly on top of the stove until soft ball stage, about 230°F on a candy thermometer, while stirring occasionally.
  6. Remove from stove, add butter and vanilla, and stir until melted and combined.
  7. Cool mixture to 160°F, then beat in the pot with a mixer.
  8. Add a few drops of milk if the mixture becomes too thick to pour.
  9. Beat extremely well until smooth and shiny.
  10. Pour into a buttered 9 x 9-inch pan.
  11. Cut into squares when just about cool.
