Ingredients

  • 2 cups sifted flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup dried apricots, chopped
  • 1/2 cup walnuts or hickory nuts
  • 1/2 cup milk
  • 3/4 cup mashed ripe bananas
  • 1 egg
  • 1/4 cup melted butter or margarine

Instructions

  1. Sift all dry ingredients together, then add chopped apricots and nuts.
  2. Combine remaining ingredients: milk, mashed bananas, egg, and melted butter.
  3. Add the wet ingredients to the dry ingredients and stir just until well blended.
  4. Turn the batter into a greased (or wax paper lined) loaf pan.
  5. Bake at 350°F (175°C) for 1 hour or until a toothpick inserted in the center comes out clean.
  6. Cool in the pan for 10 minutes.
  7. Remove from pan and cool on a wire rack.
