Sandymush Beans
A hearty, flavorful bean and meat casserole combining chicken, sausage, ham, and vegetables, perfect for comforting family dinners or gatherings with rich, savory flavors.
Ingredients
- 10 chicken thighs, cooked ⓘ
- 3 lb. Polish-type sausage, simmered 10 minutes ⓘ
- 3 lb. ham, cut into small chunks ⓘ
- 4 cans black-eyed peas ⓘ
- 4 cans Great Northern or navy beans ⓘ
- 4 cans kidney beans
- 4 large cans tomatoes ⓘ
- 3 to 4 onions, chopped ⓘ
- 4 to 6 cloves garlic, minced
- 1 bunch celery, cleaned and chopped ⓘ
- seasonings (Tabasco, pepper, basil, parsley, thyme), to taste ⓘ
Instructions
- In a large ovenproof pot, cook chopped onions, chopped celery, and minced garlic in a little olive oil until soft.
- Remove meat from cooked chicken thighs and add to the onion mixture.
- Add all remaining ingredients to the pot.
- Bake in the oven at 300°F (150°C) for 2 hours, stirring occasionally.
- Alternatively, simmer on the stovetop for 1 to 1½ hours, stirring frequently.
- Add chicken broth if the mixture becomes too dry before cooking is complete.
