Santa Fe Tomato Chowder

Ingredients

  • 1 tablespoon butter
  • 2 teaspoons minced garlic
  • 4 tomatoes, chopped
  • 1 cup water
  • 1 (15 ounce) can tomato sauce
  • 1 cup frozen corn
  • 14 cup chopped fresh cilantro
  • 1 tablespoon hot pepper sauce
  • 12 teaspoon chili powder
  • 1 ripe avocado, peeled and cubed
  • 1 cup shredded monterey jack cheese
  • 1 13 cups canned French fried onion rings

Instructions

  1. Melt butter in a large saucepan; add garlic and cook for 1 minute.
  2. Add tomatoes and cook for 5 minutes.
  3. Stir in water, tomato sauce, corn, hot pepper sauce and chili powder.
  4. Bring to a boil.
  5. Reduce heat; simmer for 10 minutes.
  6. Ladle soup into bowls, garnish with cilantro, avocado, cheese and fried onions.
