Ingredients

  • 2 (8 oz.) packages Pillsbury crescent rolls
  • 1/2 jar sauerkraut, rinsed well and drained
  • 1 medium onion, chopped
  • salt and pepper
  • bay leaf

Instructions

  1. Saute chopped onion in butter until translucent.
  2. Mix rinsed and drained sauerkraut with the cooked onion in a skillet; add bay leaf, salt, and pepper, then simmer until tender, stirring occasionally.
  3. Let the sauerkraut mixture cool.
  4. Unroll the crescent rolls and tear along the perforations to separate into triangles.
  5. Place each triangle with the wide part toward you.
  6. Put some sauerkraut mixture on each triangle and roll up away from you.
  7. Place the roll-ups on a cookie sheet, brush with beaten egg, and bake for 15 minutes at 350°F or until golden brown.

Tips & Substitutions

For added flavor, consider incorporating some caraway seeds into the sauerkraut mixture or using a different type of onion, such as sweet onion. You can substitute the Pillsbury crescent rolls with puff pastry for a flakier texture. If you prefer a vegetarian option, use vegetable broth instead of butter for sautéing the onions.

Serving Suggestions

Serve the sauerkraut roll-ups with a side of mustard or your favorite dipping sauce for a delightful contrast. They pair beautifully with a fresh salad or a side of roasted potatoes. For a complete meal, consider serving them alongside a dish like Hot Chow-Chow Relish to enhance the flavors.

Storage & Reheating

Store leftover sauerkraut roll-ups in an airtight container in the refrigerator for up to 3 days. To reheat, place them in a preheated oven at 350°F for about 10 minutes or until heated through. This helps to retain the crispiness of the crescent rolls.
