Ingredients

  • 1 lb. yellow summer squash or zucchini
  • 1/2 cup butter
  • 1 cup onion, thinly sliced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon dried basil leaves
  • 1 (8 oz.) can stewed tomatoes

Instructions

  1. Wash squash well, scrubbing with a brush.
  2. Slice into 1/2-inch thick diagonal slices.
  3. In butter in a medium skillet with a tight-fitting cover, sauté onion, stirring, until golden, about 3 minutes.
  4. Add squash, stewed tomatoes, salt, pepper, and basil; toss lightly to combine.
  5. Cook, covered, over medium heat for 10 to 15 minutes, or until squash is tender.
