Savory Ground Beef
Ingredients
- 2 tbsp olive oil ⓘ
- 1 None onion, chopped ⓘ
- 2 cloves garlic, crushed
- 1 lb ground beef ⓘ
- 4 oz button mushrooms, sliced ⓘ
- 1 None carrot, diced
- 1 None stalk celery, trimmed and diced
- 1 can (14 oz) diced tomatoes
- 1/2 cup water, stock or red wine ⓘ
- 1 tbsp tomato paste ⓘ
- 1 tbsp chopped parsley, plus additional, to serve ⓘ
- 1 None long baguette, cut into 4, halved and toasted ⓘ
- None None Mixed greens, to serve ⓘ
Instructions
- Heat the oil in a large skillet on medium heat. Saute onion and garlic for 2-3 mins until the onion is tender.
- Add ground beef to the onion mixture and cook for 4-5 mins until well browned, breaking up with a spoon as it cooks.
- Stir in mushrooms, carrot and celery, mixing well. Cook, stirring, for 5 mins.
- Add tomatoes, water and tomato paste. Season to taste, then bring to a boil. Reduce heat to low; simmer for 10 mins or until vegetables are tender. Stir in parsley. Serve on toast, sprinkled with additional parsley. Accompany with mixed greens.
