A light, no-bake Scandinavian icebox cake layered with crushed zwieback crumbs and pineapple, finished with whipped cream, perfect for a cool, fruity dessert that requires minimal effort.

Ingredients

  • 2 (No. 2) cans Dole crushed pineapple
  • 6 oz. pkg. zwieback crumbs
  • 6 Tbsp. melted butter
  • whipped cream

Instructions

  1. Drain the crushed pineapple from the cans.
  2. Crush zwieback crumbs and mix with melted butter.
  3. Layer zwieback crumbs and pineapple in a dish, starting and ending with zwieback layers.
  4. Chill the cake for 2 hours or more.
  5. Serve topped with whipped cream and garnished with additional crushed pineapple in the center.
