Scotcha-Roos are rich, chewy treats combining peanut butter, crispy rice, and a chocolate-butterscotch topping, perfect for satisfying sweet cravings and sharing at gatherings.

Ingredients

  • 1 c. sugar
  • 1 c. light corn syrup
  • 1 c. peanut butter
  • 6 c. Rice Krispies
  • 6 oz. semi-sweet chocolate morsels
  • 6 oz. butterscotch morsels

Instructions

  1. In a large pan, combine sugar and light corn syrup.
  2. Bring just to a boil over medium heat.
  3. Remove from heat and stir in peanut butter.
  4. Mix in Rice Krispies until well coated.
  5. Press the mixture into a greased pan.
  6. In a separate bowl, melt semi-sweet chocolate morsels and butterscotch morsels over low heat.
  7. Spread the melted mixture evenly over the Rice Krispies layer.
