Scrod ala Jane features tender baked fish in a creamy half-and-half sauce, complemented by sautéed onions and green peppers, perfect for a comforting family dinner.

Ingredients

  • 4 (8 oz.) scrod fillets
  • 1 tsp. basil
  • 1 tsp. lemon juice
  • 2 cups half and half
  • salt and pepper
  • 2 Tbsp. butter
  • 1 large onion
  • 1 medium green pepper

Instructions

  1. Preheat the broiler.
  2. Lightly grease a shallow baking dish large enough to hold the fish in a single layer.
  3. Place the scrod fillets in the dish, sprinkle with basil and lemon juice.
  4. Broil until half cooked, about 6 to 7 minutes.
  5. Remove from the broiler and heat the oven to 350°F (175°C).
  6. Pour half and half over the fish and sprinkle with salt and pepper.
  7. Bake in the oven for about 15 minutes, or until the fish is cooked through.
  8. While the fish is baking, heat butter in a medium-sized skillet.
  9. Cook the sliced onion and chopped green pepper until tender.
  10. Serve the baked fish topped with sautéed onion and green pepper, and crumbled bacon if desired.
