Scrumptious Banana Bread

Ingredients

  • 1 cup ripe smashed banana
  • 2 large eggs, slightly beaten
  • 1/2 cup water
  • 1/2 cup vegetable oil
  • 1 1/2 cups brown sugar
  • 3/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1 3/4 cups flour

Instructions

  1. Adjust oven rack to middle position.
  2. Heat to 350°F.
  3. Grease 1 large loaf pan or 3 mini loaf pans.
  4. Mix wet ingredients-do not over mix.
  5. Add dry ingredients to combine-do not over mix.
  6. Bake large loaf 60-70 minutes or 3 minis for 40-50 minutes. Until firm and golden brown.
  7. Let stand for a few minutes before removing from pans. Cool completely.
  8. Freezes well.
