Seafood Stuffed Avocado
Ingredients
- 2 None lemons, zested and juiced ⓘ
- 2 tbsp vegetable oil
- 2 tsp Dijon mustard ⓘ
- 1 tsp mayonnaise
- 4 oz cooked shrimp, chopped ⓘ
- 4 oz lump crabmeat ⓘ
- 1 None medium tomato, diced ⓘ
- 1/2 None yellow bell pepper, diced ⓘ
- 1 None small shallot, chopped
- 1 tbsp chopped fresh parsley leaves ⓘ
- 1 tbsp chopped fresh chives ⓘ
- 3 None small ripe avocados, pitted, peeled and halved
- None None mixed greens and cooked shrimp, to garnish ⓘ
Instructions
- In a large bowl, whisk together 1 tsp lemon zest, 2 tbsp lemon juice, vegetable oil, mustard, and mayonnaise. Season. Add shrimp, crabmeat, tomato, pepper, shallot and herbs and toss to combine.
- Brush avocados with lemon juice. Divide shrimp mixture between avocado halves and place on a serving platter. Top each with mixed greens and cooked shrimp.
