Shanghai Duck

Instructions
- Place the scallions, star anise and ginger root in a large pot or pan.
- Place duck, breast side up.
- In separate bowl, mix remaining ingredients and pour over the duck.
- Cover and bring to a boil.
- Simmer on low heat for 2 to 2 1/2 hours or until tender; turn every hour.
- Cut in small pieces and serve hot.
- Serves 6.
