Shanghai Duck

Ingredients

  • 8 scallions, cut into 2-inch lengths
  • 2 slices ginger root (size of a half dollar)
  • 1 c. dark soy sauce (low sodium)
  • 1 c. water
  • 2 star anise (16 sections)
  • 1 duck (4 to 5 lb.)
  • 1 c. light soy sauce (low sodium)

Instructions

  1. Place the scallions, star anise and ginger root in a large pot or pan.
  2. Place duck, breast side up.
  3. In separate bowl, mix remaining ingredients and pour over the duck.
  4. Cover and bring to a boil.
  5. Simmer on low heat for 2 to 2 1/2 hours or until tender; turn every hour.
  6. Cut in small pieces and serve hot.
  7. Serves 6.
