Sherried Banana Cake

Ingredients

  • 1 pkg yellow cake mix
  • 3 Tbsp butter or margarine
  • 1 Tbsp sugar
  • 4 large bananas
  • 3 Tbsp dry sherry
  • whipped cream frosting

Instructions

  1. Prepare and bake the cake in two 9-inch round cake pans according to package directions.
  2. Remove the cakes from the pans and cool as directed.
  3. Place unpeeled bananas on a baking sheet and bake in a 350°F oven for 25 to 30 minutes until very soft.
  4. Remove bananas from peel and transfer to a blender.
  5. Add butter, sherry, and sugar to the blender and blend until smooth.
  6. Cool the banana mixture slightly.
  7. Slice each cake horizontally into two layers.
  8. Place one cake layer on a serving plate, spread with one-third of the banana filling.
  9. Repeat with the remaining layers and banana filling.
  10. Top with the remaining cake layer.
  11. Frost the top and sides of the cake with whipped cream frosting.
  12. Refrigerate until ready to serve.
