Short Method Dill Pickles

Ingredients

  • 3/4 c. sugar
  • 1/2 c. salt
  • 30 to 40 medium cucumbers, cut in half or lengthwise
  • 1 qt. water
  • 3 Tbsp. mixed pickling spice
  • 1 qt. vinegar
  • green or dry dill

Instructions

  1. Combine sugar, salt, vinegar and water.
  2. Tie spices in a cheesecloth bag.
  3. Add to vinegar mixture.
  4. Simmer 15 minutes. Pack cucumbers into hot jars, leaving 1/4-inch space at top.
  5. Put a head of dill in each jar.
  6. Heat brine to boiling.
  7. Pour boiling hot vinegar mixture over cucumbers, leaving 1/4-inch space at top. Adjust caps.
  8. Process pints and quarts 15 minutes in boiling water bath.
  9. Makes about 7 pints.
