Shortbread Cookie Bars

Ingredients

  • 2 c. plain flour
  • 1 c. sugar
  • 1 egg, separated
  • 1/2 c. finely chopped pecans
  • 1 stick butter
  • 2 tsp. vanilla
  • 1 stick margarine
  • cinnamon

Instructions

  1. Cream butter and margarine.
  2. Add sugar, egg yolk, vanilla and flour and cream until smooth.
  3. Use wrapper from butter to spread dough in cookie sheet.
  4. Lay a piece of wax paper over top to help smooth batter evenly.
  5. Sprinkle lightly with cinnamon.
  6. Beat egg white until stiff, along with 1 teaspoon sugar.
  7. Spread over dough.
  8. Sprinkle with fine nuts.
  9. Bake at 275° for 45 to 60 minutes.
  10. Remove from oven at once.
  11. Cut into squares.
