Shrimp Acapulco

Ingredients

  • 12 jumbo cooked shrimp, sprinkled with cayenne
  • 1 to 2 Tbsp. melted butter
  • 1 clove garlic, minced
  • 2 green onions, chopped
  • 1 Tbsp. chives
  • 1/4 oz. brandy
  • 2 oz. dry white wine
  • 1 lemon
  • salt and pepper to taste

Instructions

  1. Simmer shrimp in butter for 3 minutes, until pink, turning them often.
  2. Add garlic, onions and chives.
  3. Pour in brandy and wine.
  4. Squeeze juice of 1 small lemon over all.
  5. Simmer 5 minutes more.
  6. Serve with chunks of French bread to dip in sauce.
  7. Serves 2 to 3.
