Ingredients

  • 2 lb. red potatoes, cut into 1 1/2-inch chunks
  • 2 medium-sized red and/or green peppers, cut into 3/4-inch wide strips
  • 2 Tbsp. salad oil
  • salt
  • 1/2 medium-size bunch green onions
  • 1 1/4 lb. large shrimp

Instructions

  1. Preheat oven to 450°F.
  2. In a large roasting pan, toss potatoes, peppers, salad oil, and 1 teaspoon salt.
  3. Roast vegetables in the oven for 30 minutes, stirring once halfway through cooking time.
  4. Meanwhile, slice green onions and peel and devein the shrimp.
  5. In a bowl, toss green onions, shrimp, and 3/4 teaspoon salt.
  6. Stir the shrimp mixture into the vegetable mixture.
  7. Roast for an additional 10 minutes or until shrimp are opaque and potatoes are fork-tender.
