Ingredients

  • 3 lb. shrimp, shelled and deveined
  • 3 Tbsp. Crab Boil
  • 1 head cauliflower
  • 3/4 lb. snow peas
  • 2 bunches watercress or romaine
  • Sherry Walnut Dressing

Instructions

  1. Make the Sherry Walnut Dressing.
  2. Halve the shrimp horizontally and cook in boiling water with Crab Boil for 30 seconds until pink.
  3. Drain the shrimp, transfer to a bowl, and toss with 1/4 cup of the dressing while still warm.
  4. Chill the shrimp mixture, covered, for 1 hour.
  5. Trim the cauliflower and separate into flowerets.
  6. Cut the cauliflower flowerets into smaller pieces, leaving 1-inch of stem attached.
  7. Blanch the cauliflower in boiling salted water for 1 minute, then drain and refresh under cold water.
  8. Transfer the cauliflower to a bowl and toss with 1/4 cup of dressing while still warm, then chill for 1 hour.
  9. Remove ends and strings from snow peas, blanch in boiling water for 1 minute, then drain and refresh under cold water.
  10. Toss the snow peas with 2 tablespoons of dressing and chill covered for 1 hour.
  11. Trim and discard coarse stems from watercress, then toss with shrimp, cauliflower, and snow peas in a large bowl.
  12. Transfer the salad to a serving bowl and drizzle remaining dressing over it.
