Ingredients

  • 4 oz. tiny shrimp
  • 4 eggs
  • 1/4 cup chopped onion
  • 1/4 cup chopped bell pepper
  • Mozzarella cheese (estimated amount)
  • Sharp cheese (estimated amount)

Instructions

  1. Saute the shrimp, chopped onion, and chopped bell pepper in butter or margarine until cooked and fragrant.
  2. In a bowl, beat the eggs and add the sautéed ingredients along with mozzarella and sharp cheeses.
  3. Pour the egg mixture into a heated, greased skillet and cook until the omelet is set and golden brown on the bottom.
  4. Fold the omelet if desired, and cook for an additional minute before serving.
