Shrimp Superb

Ingredients

  • 1 1/2 lb. shrimp, cooked and shelled
  • 8 hard-cooked eggs
  • 6 oz. Blue cheese, crumbled
  • 1/4 lb. Cheddar cheese, grated
  • 1/2 c. mayonnaise
  • 1 tsp. salt
  • 2 Tbsp. honey
  • 2 Tbsp. butter or margarine

Instructions

  1. Cut each shrimp in half lengthwise.
  2. Cut each egg into eighths. In large bowl, combine the shrimp, egg sections, Blue cheese, Cheddar cheese, mayonnaise, honey and salt.
  3. Mix very gently and slowly, until well blended.
  4. Rub a 2-quart casserole with butter or margarine.
  5. Turn the shrimp mixture into it, and sprinkle with 1 cup of finely crushed potato chips.
  6. Bake in a preheated 250° oven for 1 hour.
  7. Serves 6. Rich and delicious.
