Simple Cabbage Coleslaw

Ingredients

  • 1 head green cabbage, shredded
  • 1 white onion, thinly sliced
  • 1 bunch parsley, minced
  • 2 tablespoons tahini
  • 1/2 cup lemon juice (about two large lemons)
  • 1/4 cup white vinegar
  • 2 tablespoons Dijon mustard
  • salt and pepper

Instructions

  1. Finely shred cabbage and slice onion paper thin. Mix in a large bowl and add minced parsley.
  2. Whisk the rest of the ingredients and toss to coat. Adjust seasonings as needed.
