Ingredients

  • 4 c. cole slaw mix
  • 1 medium red or green pepper
  • 5 Tbsp. sugar
  • 5 Tbsp. cider vinegar
  • 1/4 c. water
  • 1/4 tsp. salt
  • 1/8 tsp. pepper

Instructions

  1. In a large bowl, combine the cole slaw mix and finely chopped red or green pepper.
  2. In a small bowl, whisk together sugar, cider vinegar, water, salt, and pepper until the sugar dissolves.
  3. Pour the dressing over the cabbage mixture and toss to coat evenly.
  4. Cover and refrigerate for at least 4 hours or overnight to allow flavors to meld.
