Simple Curried Egg Salad

- In a small saucepan boil your egg for 8 minutes. You want it to be hard-boiled
- Transfer your egg to cold water and peel.
- In a small bowl mash your egg, and then combine with red onion, curry powder and mayonnaise. You can adjust the quantities however you like.
- Add salt and pepper to taste
- Top with a leafy herb or sprout for garnish.
