Simple Spicy Bean Soup

Ingredients

  • 1 tbsp olive oil
  • 1 None onion, diced
  • 1 None garlic clove, crushed
  • 150 g long grain rice
  • 2 x 400 g cans kidney beans in spicy sauce
  • 400 g chopped tomatoes
  • 250 ml vegetable stock
  • 100 g tortilla chips

Instructions

  1. Heat the oil in a large saucepan, add the onion and garlic and saute for 3-4 mins, stirring. Add the rice and mix well. Mix in the beans, tomatoes and stock. Bring to a boil and simmer for 15-20 mins, until the rice is cooked. Season to taste.
  2. To warm tortilla chips, preheat the oven to 300°F. Spread the tortilla chips on a baking sheet and bake for 2-3 mins. Divide the soup between 4 bowls and serve with tortilla chips.
