Simple Squash Casserole

Ingredients

  • 4 c. boiled squash
  • 1 c. mayonnaise
  • 1 1/4 c. grated Cheddar cheese
  • salt and pepper to taste
  • 1 medium onion, chopped
  • 8 to 10 saltines, crushed
  • 1/2 stick oleo

Instructions

  1. Boil squash until tender; drain.
  2. Combine chopped onion, mayonnaise, 1 cup cheese, salt, pepper and oleo; mix well.
  3. Pour in cooked squash and mix.
  4. Pour into buttered casserole.
  5. Cover with cracker crumbs and remaining 1/4 cup cheese.
  6. Bake at 375° until cheese is melted and brown.
