Sinful Mousse

Ingredients

  • 12 oz. chocolate chips
  • 3 oz. rum extract
  • 5 eggs
  • 2 c. heavy cream
  • 1/4 tsp. vanilla
  • 1 tsp. sugar

Instructions

  1. Melt the chocolate chips in a double boiler or microwave until smooth.
  2. Stir in the rum extract and allow to cool.
  3. Separate 3 eggs, placing the whites aside.
  4. Beat the egg whites until stiff peaks form.
  5. In a large bowl, beat the remaining 2 eggs and 3 yolks until creamy.
  6. Stir the chocolate mixture into the egg yolk mixture.
  7. Gently fold in the beaten egg whites.
  8. Whip 1 cup of heavy cream until soft peaks form.
  9. Fold the whipped cream into the chocolate mixture.
  10. Pour the mousse into a 2-quart souffle dish.
  11. Chill in the refrigerator for at least 2 hours.
  12. Before serving, whip the remaining 1 cup of heavy cream with vanilla and sugar.
  13. Spoon the whipped cream on top of the mousse before serving.
