Sinful Mousse

Instructions
- Melt the chocolate chips in a double boiler or microwave until smooth.
- Stir in the rum extract and allow to cool.
- Separate 3 eggs, placing the whites aside.
- Beat the egg whites until stiff peaks form.
- In a large bowl, beat the remaining 2 eggs and 3 yolks until creamy.
- Stir the chocolate mixture into the egg yolk mixture.
- Gently fold in the beaten egg whites.
- Whip 1 cup of heavy cream until soft peaks form.
- Fold the whipped cream into the chocolate mixture.
- Pour the mousse into a 2-quart souffle dish.
- Chill in the refrigerator for at least 2 hours.
- Before serving, whip the remaining 1 cup of heavy cream with vanilla and sugar.
- Spoon the whipped cream on top of the mousse before serving.
