- Mix the strawberry cake according to the package directions and bake in two 8-inch pans. Cool completely.
- In a bowl, mix the sour cream, sugar, and frozen coconut. Refrigerate overnight.
- Remove 1 cup of the cake mix and fold it into an 8-ounce carton of Cool Whip. Blend well and refrigerate.
- Split each cake layer horizontally to create four layers.
- Spread the sour cream mixture between each cake layer.
- Frost the top and sides of the cake with the Cool Whip and sour cream mixture. Refrigerate before serving.
