Ingredients

  • 1 box strawberry cake mix
  • 2 cups sour cream
  • 2 cups sugar
  • 1 (9 or 12 oz.) package frozen coconut

Instructions

  1. Mix the strawberry cake according to the package directions and bake in two 8-inch pans. Cool completely.
  2. In a bowl, mix the sour cream, sugar, and frozen coconut. Refrigerate overnight.
  3. Remove 1 cup of the cake mix and fold it into an 8-ounce carton of Cool Whip. Blend well and refrigerate.
  4. Split each cake layer horizontally to create four layers.
  5. Spread the sour cream mixture between each cake layer.
  6. Frost the top and sides of the cake with the Cool Whip and sour cream mixture. Refrigerate before serving.
