Ingredients

  • 6 green tomatoes
  • 1 medium white head cabbage
  • 4 medium onions
  • 3/4 c. sugar (according to sourness of taste)
  • 3 c. water
  • 2 c. cider vinegar
  • 2 Tbsp. pickling spice
  • 8 to 10 small hot green and red peppers (mix for color)
  • 1/2 c. salt

Instructions

  1. Wash all vegetables; cut cabbage, tomatoes, peppers and onions into small pieces.
  2. Cover with salt.
  3. Use cloth and soak overnight, covered.
  4. Drain the excess water next morning.
  5. In pan, place pickling spice, sugar and 3 cups water to make syrup boil, then add all vegetables and cook until tender.
  6. Pack in clean jars and seal.
