Ingredients

  • 12 oz. cherry preserves
  • 2 Tbsp. lemon juice
  • 4 whole cloves
  • 1/4 tsp. salt
  • 1/4 tsp. mace
  • 1/4 tsp. allspice
  • 1 tsp. salt
  • 1/2 c. all-purpose flour
  • 4 large chicken breasts

Instructions

  1. Blend cherry preserves, lemon juice, cloves, salt, mace, and allspice. Set aside.
  2. Combine flour and salt in a paper or plastic bag. Add chicken pieces and shake to coat.
  3. Brown chicken in oil over medium heat, turning with tongs until golden.
  4. Cover and cook for 15 minutes. Drain off excess fat.
  5. Add cherry sauce to the skillet. Cover and simmer over very low heat, skin side up, for 15 minutes.
  6. Turn chicken and simmer an additional 15 minutes or until tender.
