- Peel potatoes if skin is tough, otherwise scrub and rinse. Cut potatoes into thin slices, but not all the way through, using a spoon handle to prevent cutting all the way.
- Arrange the sliced potatoes in a baking dish, fanning them slightly.
- Sprinkle with salt, drizzle with melted butter, and sprinkle with chopped fresh herbs or dried herbs of your choice.
- Bake at 425°F (220°C) for 50 minutes.
- Remove from oven and sprinkle with Cheddar cheese and Parmesan cheese.
- Bake for another 10 to 15 minutes until lightly browned.
- Check doneness with a fork before serving.
