Ingredients

  • sliced potatoes (thin)
  • chopped onion
  • chopped red pepper
  • chopped green pepper
  • jalapeno pepper (optional)
  • ham slices or smokey links, sliced
  • 6 eggs
  • Mexican Velveeta cheese

Instructions

  1. Fry first 6 ingredients until potatoes are done.
  2. Beat approximately 6 eggs.
  3. Put cheese on top of potato mixture.
  4. Pour eggs over top.
  5. When eggs settle, stir around until cheese is melted and eggs are done.
