Small Nut Rolls are delightful crescent-shaped pastries filled with nut or apricot filling, offering a sweet, buttery flavor perfect for breakfast or teatime treats.

Ingredients

  • 7 cups flour
  • 2 cups shortening
  • 1 large cake yeast
  • 6 large egg yolks
  • 1 can evaporated milk

Instructions

  1. Mix flour and shortening until well combined.
  2. Crumble in the cake of yeast into the mixture.
  3. Add egg yolks, beaten with some of the evaporated milk, and mix thoroughly.
  4. Add the remaining evaporated milk to the flour mixture and combine.
  5. Knead the dough well and refrigerate overnight.
  6. Take a portion of dough, roll into a ball as for a pie crust, using sugar instead of flour to roll out.
  7. Cut the rolled dough into triangles.
  8. Spread each triangle with nut or apricot filling.
  9. Roll up the triangles like crescent rolls.
  10. Roll the filled rolls in sugar and place on a lightly greased cookie sheet.
  11. Bake at 350°F (175°C) for 10 to 12 minutes until lightly browned.
  12. Makes approximately 8 dozen rolls.
