Ingredients

  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 stalk celery
  • 1 cup picante sauce
  • olive oil
  • 1/2 cup flour
  • salt
  • pepper

Instructions

  1. Cut the red and yellow bell peppers and celery into long strips.
  2. Saute the vegetables in olive oil until wilted.
  3. Add picante sauce to the vegetables and saute for one more minute.
  4. Set the vegetable mixture aside.
  5. Dust the snapper fillets in flour seasoned with salt and pepper.
  6. Saute the fillets in olive oil over high heat until golden brown.
  7. Turn the fillets and reduce the heat to cook through.
  8. Top the fillets with the vegetable mixture and sauce.
  9. Simmer covered for 10 minutes.
  10. Serve the snapper over rice.
