Ingredients

  • 1 medium box vanilla wafers
  • 1 large can evaporated milk
  • 2 Tbsp lemon juice
  • 3/4 cup sugar
  • grated rind of 1 lemon

Instructions

  1. Chill the evaporated milk until very icy, then whip until thick.
  2. Add sugar, lemon juice, and grated lemon rind; mix well.
  3. Crush vanilla wafers and sprinkle over the bottom of a 9 1/2 x 11-inch pan.
  4. Pour the snow pudding mixture over the crushed wafers.
  5. Top with remaining crushed wafers.
  6. Chill until the dessert is firm before serving.
