Soft-Fried Pork

Instructions
- Cut pork into diamonds of about 1/2 x 1/2 x 3/4-inch; mix with salt and cooking wine.
- Break and beat egg in a bowl.
- Add flour and stir the mixture into a smooth batter.
- Add a tablespoon of peanut oil and mix well.
- Put pork in.
- Mix and coat well with batter.
- Heat oil again and return pork to pan for another minute more of frying.
- Drain.
- Sprinkle on spiced salt before serving. Serves 2.
