Ingredients

  • 1 pint pineapple or orange sherbet, softened
  • 2 teaspoons almond extract
  • 1 package white cake mix
  • 6 cups flaked coconut

Instructions

  1. In a large mixing bowl, combine the softened sherbet, almond extract, and dry cake mix; mix well.
  2. Stir in the flaked coconut until evenly incorporated.
  3. Drop the mixture by tablespoonfuls onto greased baking sheets, spacing them about 2 inches apart.
  4. Bake at 350°F (175°C) for 12 to 15 minutes or until the edges are lightly browned.
  5. Remove from oven and transfer to wire racks to cool.
