Solar Cooked Quesadilla

Ingredients

  • 1 flour tortilla
  • 1 tablespoon melted butter
  • 3 slices roast beef, lunchmeat sliced into strips
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup shredded mild cheddar cheese

Instructions

  1. Grease a dark, nonstick 9 inch round pan with melted butter lightly.
  2. Place roast beef slices & cheeses on one side of the tortilla.
  3. Fold the other half of tortilla over, pressing down gently.
  4. Brush top with melted butter and transfer to the pan.
  5. Place pan in solar cooker.
  6. Solar cook until the cheese is melted or until the tortilla is lightly browned and crisp (About 2-3 hours).
