Ingredients

  • 1 pkg. yellow cake mix
  • 1 (20 oz.) crushed pineapple
  • 3/4 c. sugar
  • 2 (3 1/2 oz.) pkg. instant vanilla pudding
  • 3 c. milk
  • 1 container Cool Whip

Instructions

  1. Bake the yellow cake according to the package directions and let it cool.
  2. Mix the crushed pineapple and sugar together and cook for 20 minutes.
  3. Poke holes on top of the cooled cake and pour the pineapple mixture evenly over it.
  4. Allow the cake to cool completely.
  5. Prepare the vanilla pudding by mixing the pudding mix with 3 cups of milk until thickened.
  6. Pour the vanilla pudding over the pineapple-topped cake.
  7. Spread Cool Whip evenly over the pudding layer.
  8. Refrigerate the cake overnight to set.
  9. Sprinkle 3/4 cup of shredded coconut on top of the Cool Whip.
