Sopaipillas are fluffy, deep-fried bread pillows with a subtly sweet flavor, perfect as a bread or dessert accompaniment for any New Mexican meal, especially with honey.

Ingredients

  • 4 c. sifted flour
  • 1 1/2 tsp. salt
  • 1 tsp. baking powder
  • 1 Tbsp. granulated sugar
  • 1 Tbsp. shortening
  • 1 cake compressed yeast or 1 pkg. dry yeast
  • 1/4 c. warm water
  • 1 1/4 c. scalded milk

Instructions

  1. Combine dry ingredients and cut in shortening.
  2. Dissolve yeast in lukewarm water.
  3. Add to cooled scalded milk.
  4. Make a well in the center of dry ingredients.
  5. Add liquid to dry ingredients and work into dough.
  6. Knead dough 15 to 20 times and set aside for approximately 10 minutes.
  7. Roll dough to 1/4-inch thickness or slightly thinner.
  8. Cut into squares or triangles.
  9. Fry in melted shortening at 420°F, frying only a few at a time.
  10. Fry until puffed up and hollow.
  11. Drain sopaipillas on absorbent towels and serve.
