Ingredients

  • 2 cups shredded Cheddar cheese
  • 2 cups shredded Jack cheese
  • 2 (4 oz.) cans diced green chilies, drained
  • 2 cups milk
  • 1 cup buttermilk baking mix
  • 4 eggs, beaten
  • 1/4 cup salsa
  • sour cream for serving

Instructions

  1. Spray a 9 x 13-inch glass baking dish with Pam.
  2. Sprinkle shredded Cheddar and Jack cheeses evenly on the bottom of the dish.
  3. Top with drained diced green chilies.
  4. In a large bowl, combine milk, buttermilk baking mix, and beaten eggs, then beat until smooth.
  5. Carefully pour the milk mixture over the chilies and cheese in the baking dish.
  6. Spread 1/4 cup salsa over the top.
  7. Bake at 425°F for 25 to 30 minutes until puffed and golden.
  8. Cool for 10 minutes.
  9. Cut into squares and serve with sour cream, guacamole, and additional salsa.
