Sourdough Potato Braid

- In a large bowl of an electric mixer, combine yeast, 2 cups of flour, sugar, and salt.
- Add mashed potatoes, melted butter, eggs, and sourdough starter to the mixture and beat until well combined.
- Gradually add remaining flour, 1/2 cup at a time, until a soft dough forms and pulls away from the sides of the bowl.
- Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place until doubled in size, about 1 to 1.5 hours.
- Punch down the dough and divide into three equal portions.
- Roll each portion into an 18-inch long rope.
- Braid the three ropes together and place on a greased baking sheet.
- Brush the braid with the beaten egg white mixed with water.
- Bake at 375°F (190°C) for 25-30 minutes until golden brown.
- Remove from oven, let cool slightly, then serve warm.
