Sourdough Potato Braid

Ingredients

  • 1 package yeast
  • 5 1/2 to 6 cups flour
  • 2 teaspoons salt
  • 1 cup mashed potatoes
  • 3/4 cup melted butter
  • 2 eggs
  • 1 cup sourdough starter
  • 1 egg white

Instructions

  1. In a large bowl of an electric mixer, combine yeast, 2 cups of flour, sugar, and salt.
  2. Add mashed potatoes, melted butter, eggs, and sourdough starter to the mixture and beat until well combined.
  3. Gradually add remaining flour, 1/2 cup at a time, until a soft dough forms and pulls away from the sides of the bowl.
  4. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place until doubled in size, about 1 to 1.5 hours.
  6. Punch down the dough and divide into three equal portions.
  7. Roll each portion into an 18-inch long rope.
  8. Braid the three ropes together and place on a greased baking sheet.
  9. Brush the braid with the beaten egg white mixed with water.
  10. Bake at 375°F (190°C) for 25-30 minutes until golden brown.
  11. Remove from oven, let cool slightly, then serve warm.
