Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/4 cup whole wheat flour
  • 4 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • grated peel of 1 orange
  • 2 teaspoons grated lemon peel
  • 1/3 cup currants
  • 1/2 cup cold butter

Instructions

  1. In a medium bowl, combine the all-purpose flour, whole wheat flour, 3 tablespoons sugar, baking powder, baking soda, grated orange peel, grated lemon peel, and currants.
  2. With a pastry blender, work in the cold butter until fine crumbs form.
  3. Add the sourdough starter; stir with a fork until the dough holds together.
  4. Form the dough into a ball and knead briefly, only until ingredients are combined.
  5. Cut the dough into two equal parts; shape each into a ball.
  6. Flatten each ball into a 5-inch circle, leaving the dough slightly higher in the center.
  7. Cut each circle into 6 wedges.
  8. Sprinkle the scones with the remaining tablespoon of sugar.
  9. Place the scones on an ungreased baking sheet.
  10. Bake in the middle of a preheated 375°F oven for 25 to 30 minutes.
