Southern collard greens feature slow-cooked, tender greens infused with smoky ham hock flavor, perfect for comforting family meals or hearty gatherings with a touch of spice.

Ingredients

  • 1 1/2 qt. water
  • 1 ham hock
  • 1/2 lb. salt pork
  • 4 lb. collard greens
  • 1/2 tsp. hot pepper flakes
  • 1/4 cup salad oil or butter

Instructions

  1. Thoroughly wash and cut the collard greens.
  2. Put water and ham hock in a large pot with a tight-fitting lid.
  3. Bring to a boil over medium-high heat.
  4. Lower heat to very low and simmer, covered, for 30 minutes.
  5. Add collard greens and hot pepper flakes.
  6. Simmer, covered, for about 2 hours, stirring occasionally.
  7. Add salad oil or butter; simmer, covered, for 30 minutes.
  8. Check and adjust seasoning with salt and freshly ground pepper to taste.
  9. Serve hot, ideally with cornbread.
