Ingredients

  • 1 onion, sliced
  • salad oil
  • 1 can tomatoes, peeled, sliced
  • 1 lb. sliced zucchini
  • salt and pepper
  • 1 bay leaf

Instructions

  1. Cook the sliced onion in a little salad oil until tender, but not brown.
  2. Add peeled, sliced, and cooked tomatoes, sliced zucchini, salt, and pepper to taste.
  3. Cook slowly, adding a small amount of water if needed.
  4. Add bay leaf, if desired, and continue cooking until vegetables are tender.
